Zucchini Bread Recipe

Another favorite that I sometimes make:



ZUCCHINI BREAD:

3 c. flour
1 t. soda
1 t. salt
1/4 t. baking soda
3 t. cinnamon
3 eggs (beaten)
1 c. oil
2 t. vanilla
1 c. zucchini
1/2 c. nuts (optional)

Mix together all dry ingredients.  Add wet ingredients (I usually add the zucchini last).  Add nuts as a final touch.  Preheat at 350 degrees and bake for 45-55 minutes.  Makes two loaves.
